Perilla also known as Perilla frutescens is an aromatic perennial plant that is inherent to Asia. It belongs to the mint family.
The seed contains a nutty flavor, yellowish oil (40%), protein, amino acids (Valine, Leucine, Isoleucine, Lysine, Tryptophan, Threonine, Tyrosine, Phenylalanine, Cysteine, Methionine, Histidine, Aspartate, Serine, Glutamate, Proline), polyphenols the protein content of Perilla seed improved with hulling and roasting, as the protein content of whole Perilla seed and Perilla kernel are 17.2% and 20.1% respectively.
The seed contains crude protein of appx 25 %. It contains Calcium 250 mg /100 gms. Magenisum260 mg /100 gms. phosphorus 750 mg /100 gms besides iron, zinc, copper, manganese hence extremely rich source of both omega 3 fat and minerals.
